This simple syrup has a pure peppermint taste. It's perfect to add to coffee, lattes, hot chocolate, and brushing on cake layers! Yields about 10 oz.

Ingredients
1CupWater(240 ml)
1CupGranulated sugar(200 g)
1TspPeppermint extract
Instructions
Pour the water into a small saucepan. Turn the heat to medium-high until the water starts to simmer.
When the water is simmering, add 1 cup of granulated sugar.
Stir continuously until the sugar has completely dissolved. If the mixture looks cloudy, keep stirring. After 2-3 minutes the syrup should be ready and it should look clear.
Remove the saucepan from the heat and stir in 1 tsp of the peppermint extract.
Pour the mixture into a container and let it cool to room temperature before storing in the refrigerator.
Notes
Servings: You can easily half this recipe. This recipe makes about 1 1/4 cup or about 10 oz. In drinks, use 1-2 tablespoons depending on your taste preference.
Peppermint Extract: Use extract and not oil/flavor or the oil won't mix with the simple syrup. Watkins brand has a nice pure peppermint flavor. Make sure to add the extract at the end when the saucepan is off the heat or some of the flavor will be lost.
Storing:I keep all my simple syrup in mason jars for easy storage and cleaning. These cute bee mason jars are my favorite size. Optional, but I like to pour the simple syrup into jars with a funnel, especially if the jar opening is small.
Make in Advance: Make this ahead and you can keep this in the refrigerator for up to a month.
