Lavender Simple Syrup
Lavender simple syrup adds a lovely twist to your favorite drinks or sweets. Add the syrup into cocktails, mocktails, lattes, lemonade, or try making your own soda! If you’re a fan of lavender then you have to try this homemade syrup. As soon as spring is around the corner, I’m dying for a floral treat and this is just the thing to uplift or add comfort to a day.
The big benefit of using a simple syrup is that it works great in cold drinks that won’t dissolve sugar. When you infuse the syrup with a flavor like lavender, it’s an easy way to flavor your drinks right at home.

Ingredients
Simple syrup gets its name from being…really simple to make. For this recipe it’s important to find dried culinary lavender buds that are from a good source. I included a link to a good online source, but you may also find them in spice shops, specialty stores, or one of my favorite spice stores.
- Dried lavender buds
- Granulated sugar
- Water
Storing
If you’re in need of jars with good quality lids, check out these 12-oz jars that I used. What I like about these is that I can use the jars for different things like homemade sauces and as a soda bottle. If you’re looking for something a little prettier, I love these 8.5-oz flip top glass bottles. Filling these bottles with lavender simple syrup would make great gifts! Use a funnel to pour the syrup into the bottles. Of course you can always store the syrup in whatever jar your have at home that has a tight lid!
Simple syrup can be stored sealed in the refrigerator for up to one month.
How To Use Lavender Simple Syrup
There are so many ways to use lavender syrup, and probably even more than I list here. Lavender can be overwhelming fast, so use trial and error to figure out how much you prefer in your drinks.
Coffee Lattes
A lavender latte sounds delicious and dreamy whether it’s hot or iced. I usually add 1 tablespoon of simple syrup to my drinks, but you can experiment to see how much you prefer. Here are some latte flavor combination ideas:

Tea Lattes
- iced chai lavender oatmilk latte

Cocktails/Mocktails
Adding lavender simply syrup to your cocktails makes the drinks extra fun. Here are some drink ideas that are great for bridal showers, weddings, baby showers, garden parties, or any occasion when a drink calls for some lavender!

Brush Onto Cake Layers
Bakers often brush unflavored simply syrup onto cake layers to keep them moist. Try brushing on lavender simple syrup for a little extra flavor. It pairs well with vanilla, lemon, and earl grey cakes. To brush the syrup on, I use a pastry brush.


Make Sodas At Home
Making sodas at home has been such a fun obsession lately. Choose sparkling water or club soda depending on your preference. Fill a glass with ice and add 1 1/2 to 2 ounces of lavender syrup. Add the 14-16 ounces of sparking water and swirl lightly before drinking. Easy and refreshing!
Lavender Lemonade
The idea of an iced cold lavender lemonade during a hot summer day sounds dreamy. This is a great option to serve at a party whether it’s a bridal shower, baby shower, engagement party, garden party, or other. For two servings you’ll need 16 ounces of cold water, 3 ounces of lavender syrup, 3 ounces of lemon juice. Garnish with lemon slices or a a fresh lavender flower.
How To Make Lavender Simple Syrup



Let’s get started! Add the water and sugar into a heavy bottom saucepan. Bring to a boil over medium-high heat. Stir until the sugar is dissolved.
Add the dried lavender buds, stir, and simmer for 2 minutes. Remove from the heat and steep the dried lavender for 10 minutes.
Strain the lavender buds (strain as many times as needed until no bits remain). Pour the mixture into a glass jar and refrigerate for up to 2 months.

FAQ’S
Can I use Fresh Lavender?
At this time, I haven’t tested this recipe with fresh lavender. I find that purchasing dried lavender buds is much easier than harvesting fresh buds. I’d suggest trying it with 2-4 tablespoons of fresh buds to figure out the taste.
Can I use Essential Oil?
No! Essential oils typically made as a fragrance and not for consumption.
How Long Does This Syrup Last?
For the best taste, no longer than 1 month in the refrigerator.
How Do I know The Syrup Is Ready?
Follow the times in the instruction card. Simple syrup is quick to make and I find that steeping the dried buds for too long will make it bitter and overpowering.
My Simple Syrup Crystallized
When you boil your syrup for longer than a recipe states, you create a much thicker syrup. When too much water evaporates the simple syrup has a higher chance of crystallizing in the refrigerator.
