Earl Grey Syrup 

Making simple syrup is easy, it’s in the name! Simple syrup is essentially boiling water, stirring in sugar until it dissolves, and then adding an optional flavor. This liquid sugar can sweeten and flavor cold drinks, hot drinks, be brushed onto cake layers, added to lattes, and more.

Earl grey tea is aromatic and fragrant from infusing tea leaves with citrusy bergamot. It’s important to note that earl grey tea has such a delicate flavor profile and because of that, it can be difficult to infuse this flavor. One way to bring out the flavor is steeping it in simple syrup which is what this blog post is about. You can also infuse it in milk!

I’ve tested this recipe infusing three, four, and five teabags! Five teabags was the magic number for me in order to find a balance between the sweetness from the granulated sugar and the delicateness of the tea. If you find it’s too much, you can try steeping three or four teabags.

Ingredients

The best thing about making simple syrup is that you don’t need many ingredients. 

  • Water
  • Granulated sugar (you can substitute for brown sugar for a slightly caramel flavor)
  • Earl grey tea bags (or 1 ½ teaspoons of loose leaf tea per teabag)

What Can You Do With Earl Grey Syrup?

There’s lots of ways to use earl grey simple syrup!

Try adding to coffee or tea lattes 

My favorite way at the moment is adding 1-2 tablespoons of syrup into an iced matcha latte to make an earl grey matcha (pictured above)! Add to coffee drinks like a lavender latte, or a London fog latte to make it extra flavorful.

Mocktails and cocktails

Try making an earl grey old fashioned – replace the sugar with syrup, add bourbon, bitters, and an orange twist. Or try a London fog martini, an earl grey sour, or make them into mocktails.  

Make a soda at home

When you have simple syrups prepared, all you have to do is pour some club soda into a glass with ice and add earl grey syrup!

Baking & Treats

Drizzle over pancakes or waffles, warm scones, or brush onto muffin tops. Use it as a syrup to brush onto cake layers like lemon or earl grey cakes. Add the syrup into a powdered sugar glaze for a subtle earl grey topping on donuts or pound cakes. Pour a little bit onto vanilla or honey ice cream!

How To Make Earl Grey Simple Syrup

In a heavy bottom saucepan, bring the water to a boil. Turn the heat off and steep the earl grey tea bags for 6-8 minutes. Lightly squeeze the absorbed liquid from the teabags by pressing them with a wooden spoon (they’ll be hot!)  and then discard.

Add the sugar and stir until dissolved. Bring to a boil then turn the heat on low and let it simmer for 5-10 minutes to thicken.

Remove from the heat, let the syrup cool then store in a jar. Keep in the refrigerator for up to 1 month.

FAQ

Does This Have Caffeine?

Yes it does. You can make this recipe with decaffeinated earl grey tea if you prefer not to have caffeine. 

Loose Leaf Tea?

Use 1 ½ teaspoons of loose leaf tea (my favorite brand) per earl grey teabag. Follow step 1, strain the tea, then add it back into the pot and follow step 2 and 3.

How Long Does it last?

Keep in the refrigerator for up to 1 month.
