Peppermint Simple Syrup
Peppermint simple syrup is great to add to your lattes, cocktails, hot chocolates, and cake layers! This recipe calls for peppermint extract (not mint) and takes less than five minutes.
What is Simple Syrup?
Simple syrups are made with equal parts water and sugar, heated in a sauce pan over the stove for a few minutes. Heat helps dissolve the granulated sugar.
Simple syrup is useful to add to cold drinks without worrying about whether the is sugar will dissolve.
Ingredients & Substitutions
Simple syrups are incredibly easy to make and the flavor possibilities are endless! During the cold months when peppermint is all the rage, it’s nice to have a peppermint simple syrup on hand.
You need:
- Water
- Granulated Sugar โ You can substitute extra fine sugar or caster sugar
- Peppermint Exact โ You can find peppermint extract in some grocery stores! Make sure you use extract, donโt use peppermint oil/flavor.
What Do You Use Peppermint Simple Syrup For?
Add peppermint simple syrup to your morning coffee, lattes, hot chocolates, matcha lattes, cocktails, mocktails, and brush on cake layers. There are so many ways to use it!
Adding simple syrup to cake layers keeps them moist. The benefit of using peppermint simple syrup is to add even more flavor to a cake. Brush on the simple syrup on cakes layers before assembling it!
How Do You Make Peppermint Simple Syrup?
Gather 1 cup of water and 1 cup of granulated sugar. Pour the water into a small saucepan. Turn the heat to medium-high until the water starts to simmer. Then add your 1 cup of granulated sugar.
Stir continuously until the sugar has completely dissolved. If the mixture looks cloudy, keep stirring. After 2-3 minutes the syrup should be ready and it should look clear.
Remove the saucepan from the heat and stir in 1 tsp of the peppermint extract. It’s better to wait to add the extract after heating your water and sugar mixture otherwise you’ll lose some of it’s flavor.
Pour the mixture into a container and let it cool to room temperature before storing in the refrigerator. I keep all my simple syrups in mason jars for easy storage and cleaning. Optional, but I like to pour the simple syrup into jars with a funnel, especially if I use smaller jars.
You can make this peppermint simple syrup in advance. Store the syrup in an airtight container in the refrigerator for 1 month.
How Much Peppermint Syrup Do I Use?
This will vary depending on your personal taste preference for sweet and minty things!
A suggested serving for 12 oz drinks is 2 tablespoons. However, I like to use 1 to 2 tablespoons depending on the type of drink and how much sugar I’m craving.
For an 8 oz drink, I tend to use 1 tablespoon. If you’re not sure, start with less and taste test until you find the amount you like!
Storing Peppermint Simple Syrup
Peppermint simple syrup can be stored in an airtight container in the refrigerator for a month. I love to use mason jars so I can easily see when I’m running low. ?

Peppermint Simple Syrup
Ingredients
- 1 Cup Water (240 ml)
- 1 Cup Granulated sugar (200 g)
- 1 Tsp Peppermint extract
Instructions

- When the water is simmering, add 1 cup of granulated sugar.
- Stir continuously until the sugar has completely dissolved. If the mixture looks cloudy, keep stirring. After 2-3 minutes the syrup should be ready and it should look clear.

Notes
- Servings: You can easily half this recipe. This recipe makes about 1 1/4 cup or about 10 oz. In drinks, use 1-2 tablespoons depending on your taste preference.ย
- Peppermint Extract:ย Use extract and not oil/flavor or the oil won’t mix with the simple syrup. Watkins brand has a nice pure peppermint flavor. Make sure to add the extract at the end when the saucepan is off the heat or some of the flavor will be lost.
- Storing: I keep all my simple syrup in mason jars for easy storage and cleaning. These cute bee mason jars are my favorite size. Optional, but I like to pour the simple syrup into jars with a funnel, especially if the jar opening is small.
- Make in Advance: Make this ahead and you can keep this in the refrigerator for up to a month.
