Liquid gold and delicious! This is a perfect simple syrup that can be used in so many ways like adding to an iced latte, a matcha latte, on cakes, drizzle on pancakes, and really anything that you’d like to pair with a delicious honey flavor. Read on for more ideas!
Ingredients & Types Of Honey
You only need two ingredients to make this recipe!

- Honey
A quick note on honey… The honey that you get from the grocery store versus the honey straight from the hive (check out your local farmers market) tastes different. A lot of generic grocery store brand honeys have added sugars and less good stuff (good stuff meaning honey – how many times can I type honey on this post?!).
I buy local honey from my farmers market and the difference in taste is huge (plus I like supporting local business)! It’s sweet but not as sweet as the generic kind from the store and has more complex floral notes. Honey can also taste different depending on the time of year, where it’s harvested from, and what types of flowers the bees are collecting from.
That being said, choose the honey that you love the most and it will taste amazing!

Honey vs. Honey Simple Syrup?
It might seem like they’re the same but theres a few things that happen when you make honey syrup versus pouring honey from a bottle.
Honey by itself is thicker and a little bit harder to incorporate into drinks. When you add honey into a cold drink, it can seize and become hard to dissolve.
Honey simple syrup is mixed with water and heated which thins it out, making it much easier to add to drinks. It also makes it easier to brush onto baked treats or onto cake layers.
Ratios
This recipe uses a 1:1 ratio meaning 1 part honey to 1 part water. This makes a thinner consistency which is great for dabbing onto cake layers to keep them moist.
If you prefer a thicker honey simple syrup, use a ratio of 2 parts honey, 1 part water.
What Can I Use Honey Simple Syrup For?
- To sweeten cold drinks that will easily dissolve honey simple syrup
- Add to cocktails and mocktails
- Brush onto cake layers to keep them moist
- Pour onto pancakes, waffles, oatmeal, or yogurt
- Add as a glaze onto muffin tops, breads, or scones
- In a salad dressing or marinade
Storage
For the freshest honey simple syrup, store in the refrigerator for up to one month. These cute 8.5 oz glass bottles are perfect to store all of your syrups in!
What that being said, I haven’t seen my honey syrup ever “go bad” which is due to its antimicrobial properties. I’ve seen it crystalize and thicken but never grow mold.

Ingredients
- ½ cup water
- ½ cup honey see note for a 2:1 ratio
Instructions
- Add the water and honey to a saucepan and bring to a simmer over medium heat.
- Stir until dissolved.
- Transfer to a glass jar and let it cool before refrigerated.
